Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 1/3 cup chocolate protein powder
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 1/2 cup fresh raspberries

Instructions

  1. 1In a large mixing bowl or 4-cup measuring jug, whisk the almond milk, chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until no dry clumps remain.
  2. 2Add the chia seeds and whisk vigorously for a full minute so every seed is coated and suspended.
  3. 3Let the mixture rest 5 minutes, then whisk again thoroughly to break up any early clumps that form on the surface.
  4. 4Divide evenly into four meal-prep jars or containers with lids.
  5. 5Seal and refrigerate for at least 4 hours or overnight until the pudding thickens to a spoonable, mousse-like consistency.
  6. 6Before serving, give each jar a quick stir; if it seems too thick, loosen with a splash of almond milk.
  7. 7Top each portion with a few fresh raspberries just before eating for bright contrast.
  8. 8Enjoy cold straight from the jar as a high-protein dessert or late-night sweet.
  9. 9Puddings keep well sealed in the fridge for up to 5 days, making them ideal grab-and-go meal-prep sweets.
