Ingredients
- 1/2 cup chia seeds
- 3 tbsp unsweetened cocoa powder
- 2 scoops chocolate or vanilla protein powder
- 2 cups unsweetened almond milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1/8 tsp pinch of salt
- 1/2 cup Greek yogurt
- 2 tbsp dark chocolate shavings
- 1 cup fresh berries for topping
Instructions
- 1In a large mixing bowl whisk the cocoa powder and protein powder together so no dry clumps remain.
- 2Pour in the almond milk, maple syrup, vanilla, and salt, whisking until the mixture is completely smooth and chocolatey.
- 3Add the chia seeds and stir thoroughly for a full minute so every seed is coated and suspended.
- 4Fold in the Greek yogurt until the pudding base looks creamy and uniform.
- 5Divide the mixture evenly among four jars or meal-prep containers, leaving a little headspace.
- 6Seal and refrigerate at least 4 hours or overnight; the chia will swell and turn the mixture into a thick pudding.
- 7After chilling, give each jar a good stir; if it seems too thick, loosen with a splash of almond milk.
- 8Top each portion with fresh berries and a few dark chocolate shavings just before eating or packing.
- 9Keep sealed jars in the fridge up to four days for grab-and-go high-protein dessert or snack.
- 10For extra richness, warm one jar 20 seconds in the microwave and eat like warm chocolate mousse.
