Ingredients

  • 1/2 cup chia seeds
  • 3 tbsp unsweetened cocoa powder
  • 2 scoops chocolate or vanilla protein powder
  • 2 cups unsweetened almond milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/8 tsp pinch of salt
  • 1/2 cup Greek yogurt
  • 2 tbsp dark chocolate shavings
  • 1 cup fresh berries for topping

Instructions

  1. 1In a large mixing bowl whisk the cocoa powder and protein powder together so no dry clumps remain.
  2. 2Pour in the almond milk, maple syrup, vanilla, and salt, whisking until the mixture is completely smooth and chocolatey.
  3. 3Add the chia seeds and stir thoroughly for a full minute so every seed is coated and suspended.
  4. 4Fold in the Greek yogurt until the pudding base looks creamy and uniform.
  5. 5Divide the mixture evenly among four jars or meal-prep containers, leaving a little headspace.
  6. 6Seal and refrigerate at least 4 hours or overnight; the chia will swell and turn the mixture into a thick pudding.
  7. 7After chilling, give each jar a good stir; if it seems too thick, loosen with a splash of almond milk.
  8. 8Top each portion with fresh berries and a few dark chocolate shavings just before eating or packing.
  9. 9Keep sealed jars in the fridge up to four days for grab-and-go high-protein dessert or snack.
  10. 10For extra richness, warm one jar 20 seconds in the microwave and eat like warm chocolate mousse.
