Ingredients

  • 3 cups plain Greek yogurt
  • 2 tsp matcha powder
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup granola
  • 1 cup fresh strawberries
  • 1/2 cup fresh blueberries
  • 2 tbsp chia seeds
  • 2 tbsp white chocolate chips or shavings
  • 2 tbsp toasted coconut flakes

Instructions

  1. 1In a medium bowl, sift the matcha powder to remove any clumps so the yogurt stays silky and free of bitter green flecks.
  2. 2Add a few spoonfuls of Greek yogurt to the matcha and whisk into a smooth, intense green paste before folding in the remaining yogurt.
  3. 3Stir honey and vanilla into the matcha yogurt until evenly sweetened and pale jade in color. Taste and add a touch more honey if you prefer it sweeter.
  4. 4Hull and slice the strawberries. Keep blueberries whole. Pat fruit dry so the parfait layers stay distinct and do not weep.
  5. 5Spoon a layer of matcha yogurt into the bottom of four glasses or jars. Sprinkle a thin layer of granola and chia seeds over the yogurt.
  6. 6Add a layer of mixed berries, then repeat with more matcha yogurt, granola, and fruit until the glasses are nearly full, ending with yogurt on top.
  7. 7Finish each parfait with a few white chocolate shavings, toasted coconut, and a final berry or two for color.
  8. 8Chill at least 15 minutes so the chia softens slightly and the flavors meld. For meal prep, assemble without the final crunchy toppings and add those just before eating.
  9. 9Keep covered in the refrigerator up to 3 days; the yogurt stays thick and the matcha flavor deepens overnight.
