  • 5 medium ripe peaches
  • 1/3 cup honey
  • 3 tbsp unsalted butter
  • 2 tbsp light brown sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 pinch kosher salt
  • 1 pinch ground cinnamon
  • 1/3 cup sliced almonds
  • 1.5 quarts vanilla ice cream
  • for finishing flaky sea salt

Instructions

  1. 1Pit and cut the peaches into thick wedges, leaving skins on for color and structure.
  2. 2Place a 10-inch skillet over medium heat and melt the butter until it just begins to foam.
  3. 3Add the peach wedges in a single layer and cook undisturbed 2 minutes so the cut sides start to caramelize.
  4. 4Drizzle in the honey and sprinkle the brown sugar, cinnamon, and salt over the fruit; stir gently to coat.
  5. 5Continue cooking, stirring only occasionally, until the peaches are tender and the syrup thickens to a glossy, spoon-coating consistency, 6 to 8 minutes total.
  6. 6Remove the skillet from heat, stir in lemon juice and vanilla, and let the sauce cool 5 minutes so it thickens further.
  7. 7Meanwhile toast the sliced almonds in a dry small skillet over medium heat, tossing constantly until golden and fragrant, about 3 minutes; transfer to a plate.
  8. 8Scoop vanilla ice cream into bowls and generously spoon the warm honey-roasted peach sauce over each serving.
  9. 9Scatter toasted almonds on top and finish with a tiny pinch of flaky sea salt to balance the sweetness.
