Ingredients

  • 1/2 cup vanilla protein powder
  • 1 1/2 cups almond flour
  • 4 large eggs
  • 3/4 cup plain Greek yogurt
  • 1/2 cup honey
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 medium apple fresh apple slices
  • 1/8 tsp pinch of salt
  • 1 tsp olive oil for greasing

Instructions

  1. 1Preheat the oven to 350°F and lightly grease an 8-inch round cake pan, then line the bottom with a parchment circle for clean release.
  2. 2In a large bowl whisk the eggs until frothy and slightly pale, then stream in the honey and vanilla extract until the mixture looks glossy.
  3. 3Fold in the Greek yogurt until fully incorporated and the batter turns creamy and uniform.
  4. 4In a separate bowl combine the almond flour, protein powder, baking powder, cinnamon, and salt, breaking up any clumps with a fork.
  5. 5Add the dry mixture to the wet ingredients in two additions, stirring gently just until no dry streaks remain; the batter will be thick but spoonable.
  6. 6Scrape the batter into the prepared pan and smooth the top with a spatula.
  7. 7Arrange thin apple slices on the surface in a single layer, pressing them lightly so they sink halfway into the batter during baking.
  8. 8Bake on the center rack for 28 to 32 minutes until the edges are deep golden, the center springs back when touched, and a toothpick comes out with only moist crumbs.
  9. 9Cool the cake in the pan for 15 minutes, then invert onto a rack, peel off the parchment, and turn right-side up to finish cooling.
  10. 10Slice into wedges and serve slightly warm or at room temperature; a thin drizzle of extra honey is optional for shine.
