Ingredients

- 1 1/2 cups almond flour

- 2 tsp baking powder

- 1 medium apple fresh apple slices
- 1/8 tsp pinch of salt
- 1 tsp olive oil for greasing
Instructions
- 1Preheat the oven to 350°F and lightly grease an 8-inch round cake pan, then line the bottom with a parchment circle for clean release.
- 2In a large bowl whisk the eggs until frothy and slightly pale, then stream in the honey and vanilla extract until the mixture looks glossy.
- 3Fold in the Greek yogurt until fully incorporated and the batter turns creamy and uniform.
- 4In a separate bowl combine the almond flour, protein powder, baking powder, cinnamon, and salt, breaking up any clumps with a fork.
- 5Add the dry mixture to the wet ingredients in two additions, stirring gently just until no dry streaks remain; the batter will be thick but spoonable.
- 6Scrape the batter into the prepared pan and smooth the top with a spatula.
- 7Arrange thin apple slices on the surface in a single layer, pressing them lightly so they sink halfway into the batter during baking.
- 8Bake on the center rack for 28 to 32 minutes until the edges are deep golden, the center springs back when touched, and a toothpick comes out with only moist crumbs.
- 9Cool the cake in the pan for 15 minutes, then invert onto a rack, peel off the parchment, and turn right-side up to finish cooling.
