Instructions

  1. 1Add the cottage cheese to a food processor or high-speed blender and blend until completely smooth and creamy with no visible curds remaining.
  2. 2Scrape down the sides, then add the peanut butter, protein powder, maple syrup, vanilla extract, and salt.
  3. 3Blend again until a thick, uniform cookie-dough texture forms, pausing once to scrape the bowl so everything incorporates evenly.
  4. 4Transfer the mixture to a medium mixing bowl and fold in the mini chocolate chips with a spatula until they are evenly distributed.
  5. 5Taste and adjust sweetness if needed by folding in a little extra maple syrup, keeping the dough thick enough to scoop.
  6. 6Divide into four small airtight containers or jars for grab-and-go portions.
