Ingredients
- 1 cup low-fat cottage cheese
- 1/3 cup natural peanut butter
- 1/2 cup vanilla protein powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 3 tbsp mini chocolate chips
- 1 pinch pinch of salt
Instructions
- 1Add the cottage cheese to a food processor or high-speed blender and blend until completely smooth and creamy with no visible curds remaining.
- 2Scrape down the sides, then add the peanut butter, protein powder, maple syrup, vanilla extract, and salt.
- 3Blend again until a thick, uniform cookie-dough texture forms, pausing once to scrape the bowl so everything incorporates evenly.
- 4Transfer the mixture to a medium mixing bowl and fold in the mini chocolate chips with a spatula until they are evenly distributed.
- 5Taste and adjust sweetness if needed by folding in a little extra maple syrup, keeping the dough thick enough to scoop.
- 6Divide into four small airtight containers or jars for grab-and-go portions.
- 7Chill in the refrigerator for at least 30 minutes so the dough firms up and the flavors meld.
- 8Serve cold with a spoon, or roll into bite-size balls if preferred for snacking.
- 9Store covered in the fridge up to 4 days; stir briefly before eating if any liquid separates.
