Ingredients

  • 2 cups low-fat cottage cheese
  • 2 cups frozen mixed berries
  • 2 scoops vanilla protein powder
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 1/2 cup fresh berries for topping
  • 2 tbsp chopped mint leaves

Instructions

  1. 1Add the cottage cheese to a high-speed blender and process on high until completely smooth and creamy with no curds remaining, scraping down the sides once.
  2. 2Add the frozen mixed berries, protein powder, honey, lemon juice, vanilla extract, and salt to the blender.
  3. 3Blend on high for 45 to 60 seconds until the mixture turns a uniform vibrant color and thickens into a mousse-like texture.
  4. 4Taste and adjust sweetness if needed by pulsing in a little more honey, then blend once more to incorporate.
  5. 5Spoon the mousse evenly into four serving glasses or small bowls.
  6. 6Cover and chill in the refrigerator for at least 20 minutes so the mousse firms slightly and flavors meld.
  7. 7Just before serving, top each portion with a scattering of fresh berries.
  8. 8Finish with a light sprinkle of chopped mint leaves for brightness and color contrast.
  9. 9Serve immediately chilled with a spoon; leftovers keep covered in the fridge up to 2 days.
