Ingredients
- 1 packet (0.3 oz) sugar-free berry gelatin powder
- 1 cup boiling water
- 1/2 cup cold water
- 1 1/2 cups low-fat cottage cheese
- 1 scoop (30 g) vanilla whey protein powder
- 1/2 cup plain nonfat Greek yogurt
- 1/2 cup fresh raspberries
- 1 tsp lemon zest
Instructions
- 1Bring a kettle or small saucepan of water to a full rolling boil. Empty the gelatin powder into a medium heatproof mixing bowl.
- 2Pour the boiling water over the gelatin and whisk steadily for a full 2 minutes until every grain dissolves and the liquid looks completely clear.
- 3Stir in the cold water to cool the mixture slightly, then set the bowl aside for 5 minutes so it is warm but no longer steaming.
- 4Add the cottage cheese, protein powder, and Greek yogurt to a blender. Blend on high for 45 to 60 seconds until the texture is completely smooth and fluffy with no curds remaining.
- 5With the blender running on low, slowly stream in the warm gelatin mixture until everything is fully combined and airy.
- 6Taste and fold in the lemon zest with a spatula for brightness. Divide the mixture evenly among 4 clear cups or ramekins.
- 7Press a few fresh raspberries into the top of each cup so they sit half-submerged. Cover each cup tightly.
- 8Chill in the refrigerator for at least 2 hours, or until the cups are fully set and jiggly but firm enough to hold a spoon.
- 9Just before serving, give each cup a gentle shake to check the set. Serve cold straight from the fridge for the fluffiest texture.
