  • 3 tbsp unsalted butter, melted
  • 1/3 cup brown sugar
  • 2 tsp ground cinnamon
  • 1 cup cottage cheese
  • 1 scoop vanilla protein powder
  • 1/2 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. 1Preheat the oven to 375°F and lightly grease a 9-inch round cake pan or cast-iron skillet so the rolls release cleanly later.
  2. 2Open the biscuit dough and separate each biscuit; gently stretch or flatten each one into a thin oval on a clean surface.
  3. 3Brush every oval lightly with melted butter, then sprinkle the brown sugar and cinnamon mixture evenly over the surfaces so the filling sticks.
  4. 4Roll each piece tightly from the short side into a spiral cinnamon roll shape and nestle them snugly side by side in the prepared pan.
  5. 5Bake for 18 to 22 minutes until the tops are deep golden brown, the centers look set, and the kitchen smells strongly of caramelized cinnamon.
  6. 6While the rolls bake, blend the cottage cheese, protein powder, powdered sugar, milk, and vanilla extract until completely smooth and pourable for a high-protein glaze.
  7. 7Remove the pan from the oven and let the rolls rest 3 minutes so the gooey centers firm slightly without cooling completely.
  8. 8Drizzle the protein glaze generously over the hot rolls so it melts into the crevices and creates a shiny finish.
