Ingredients
- 1 cup whole-wheat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup unsweetened almond milk
- 2 tbsp light butter
- 1 tsp vanilla extract
- 1 egg white
- 1/4 cup coconut sugar
- 1 1/2 tsp ground cinnamon
- as needed cooking spray
- 1/2 cup nonfat Greek yogurt
- 1 tbsp honey
Instructions
- 1In a mixing bowl whisk together the flour, baking powder, and salt until evenly combined and free of lumps.
- 2Warm the almond milk and light butter together in a small saucepan over medium heat just until the butter melts and the liquid steams lightly, then remove from heat and stir in the vanilla.
- 3Pour the warm liquid into the dry ingredients and add the egg white, stirring with a wooden spoon until a soft, slightly sticky dough forms that pulls away from the sides.
- 4Let the dough rest five minutes so the flour hydrates fully, then lightly flour your hands and roll small portions into bite-size logs the thickness of a finger.
- 5Preheat the air fryer to 370°F for three minutes and lightly mist the basket with cooking spray so nothing sticks.
- 6Arrange the dough bites in a single layer without crowding, mist the tops lightly, and air-fry for eight to ten minutes, shaking the basket halfway, until puffed, golden, and crisp on the outside.
- 7While they cook, stir the coconut sugar and cinnamon together in a shallow bowl and whisk the Greek yogurt with honey in a separate small cup for dipping.
- 8Immediately toss the hot churro bites in the cinnamon-sugar mixture so the coating clings, working in batches if needed.
- 9Transfer the coated bites to a serving plate and serve warm with the yogurt-honey dip on the side for a lighter classic-swap finish.
- 10Store any leftovers in an airtight container and re-crisp briefly in the air fryer the next day if desired.
