Ingredients

  • 10 tbsp unsalted butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup white chocolate chips
  • 1 large ripe peach
  • 2 tbsp hot honey
  • pinch flaky sea salt

Instructions

  1. 1Preheat the oven to 350°F. Line an 8-inch square pan with parchment paper leaving an overhang on two sides.
  2. 2Melt the butter in a light-colored saucepan over medium heat. Cook, swirling often, until the milk solids turn deep golden brown and smell nutty, 4 to 6 minutes. Pour into a heatproof bowl and cool 8 minutes.
  3. 3Whisk both sugars into the browned butter until smooth. Add the whole egg, egg yolk, and vanilla and whisk vigorously for 30 seconds until glossy.
  4. 4Stir in the flour, baking powder, and salt just until a soft dough forms. Fold in the white chocolate chips.
  5. 5Spread the dough evenly into the prepared pan. Dice the peach into small cubes and scatter them over the top, pressing gently so they adhere.
  6. 6Bake for 24 to 28 minutes until the edges are set and golden brown and the center still looks slightly soft but not wet.
  7. 7Immediately after removing from the oven, drizzle the hot honey over the warm bars in thin ribbons. Sprinkle flaky sea salt on top.
  8. 8Cool completely in the pan on a rack for at least 45 minutes so the bars firm up, then lift out and cut into six neat bars.
