Ingredients
- 10 tablespoons unsalted butter
- 2 medium ripe peaches
- 2 medium crisp apples
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/2 cup whole milk
- 1 tablespoon turbinado sugar
Instructions
- 1Preheat the oven to 350°F. Place a 10-inch oven-safe skillet over medium heat and melt the butter until it foams, turns golden, and smells nutty, about 4 to 5 minutes.
- 2Pour most of the brown butter into a large mixing bowl, leaving one tablespoon coating the skillet.
- 3Pit and slice the peaches; core and thinly slice the apples. Toss both fruits lightly so they are ready to arrange.
- 4Whisk the granulated sugar and brown sugar into the browned butter in the bowl until combined.
- 5Beat in the eggs one at a time, then stir in the vanilla until the mixture looks smooth and glossy.
- 6In a separate bowl whisk together the flour, baking powder, cinnamon, and salt.
- 7Alternate adding the dry ingredients and the milk to the butter mixture, stirring gently just until no dry streaks remain.
- 8Pour the batter into the buttered skillet and smooth the top. Arrange the peach and apple slices in a single overlapping layer over the batter.
- 9Sprinkle the turbinado sugar evenly over the fruit for a crunchy, caramelized finish.
- 10Bake for 35 to 40 minutes until the cake is golden, the edges pull slightly from the pan, and a toothpick inserted in the center comes out clean.
- 11Cool in the skillet for 15 minutes so the crumb sets, then slice into wedges and serve warm.
- 12Optional: finish with a dollop of whipped cream or a drizzle of remaining brown butter if any is left.
