Ingredients
- 1 package (2 crusts) refrigerated pie crusts
- 2 medium ripe peaches
- 3 tbsp granulated sugar
- 1 1/2 tsp cornstarch
- 1/2 tsp ground cinnamon
- 1 tsp fresh lemon juice
- 1 pinch of kosher salt
- 1, beaten large egg
- 2 tbsp hot honey
- 1 tbsp turbinado sugar
Instructions
- 1Pit and finely dice the peaches. Toss them in a bowl with the granulated sugar, cornstarch, cinnamon, lemon juice, and salt until evenly coated; let sit 5 minutes so juices thicken slightly.
- 2Unroll the pie crusts on a lightly floured surface. Use a 4- to 5-inch round cutter (or a bowl as a guide) to cut four circles from each crust, re-rolling scraps once if needed.
- 3Spoon a heaping tablespoon of the peach filling onto the center of four dough circles, leaving a clean 1/2-inch border all around.
- 4Brush the borders lightly with beaten egg. Top each with a second dough circle and press the edges firmly with a fork to seal; poke two small steam vents in the top of each pie.
- 5Brush the tops with more egg wash and sprinkle generously with turbinado sugar for crunch and sparkle.
- 6Preheat the air fryer to 350°F for 3 minutes. Arrange two hand pies in the basket without overlapping and air-fry until deep golden and the filling is bubbling at the vents, 8 to 10 minutes.
- 7Transfer finished pies to a wire rack and repeat with the remaining two pies.
- 8While the pies are still warm, drizzle each with hot honey so it seeps into the vents and glazes the sugary tops.
- 9Cool 5 to 10 minutes before eating so the filling sets enough to avoid burns. Serve warm as a portable late-summer treat.
