
Air-Fryer Cinnamon-Sugar Peach Hand Pies

Ingredients
- 1 box (2 crusts) refrigerated pie crusts
- 2 large ripe peaches
- 1/4 cup brown sugar
- 3 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 tbsp cornstarch
- 1/2 tsp vanilla extract
- 1 large egg
- 1 tbsp water
- 1 tbsp butter
- 1 pinch pinch of salt
Instructions
- 1Pit and finely dice the peaches so the pieces are small enough to seal inside pastry without bursting. Toss the diced peaches with brown sugar, half the cinnamon, cornstarch, vanilla, and salt; let the mixture sit 5 minutes so the juices thicken slightly.
- 2Unroll the pie crusts on a lightly floured surface and cut into 4- to 5-inch rounds using a bowl or cutter; re-roll scraps once for extra rounds until you have 6.
- 3Spoon a modest mound of the peach filling onto the center of each round, leaving a clear border all around. Dot each mound with a tiny bit of butter.
- 4Fold each round in half to form a half-moon and press the edges firmly with a fork to seal. Cut two tiny steam slits on top of each pie.
- 5Whisk the egg with the water to make a quick egg wash. Brush the tops of the sealed pies lightly, then sprinkle with the remaining granulated sugar mixed with the rest of the cinnamon.
- 6Preheat the air fryer to 350°F for 3 minutes. Arrange 2 or 3 pies in a single layer in the basket without overcrowding; air-fry 8 to 10 minutes until the pastry is deep golden and the filling is bubbling at the slits.
- 7Transfer finished pies to a wire rack and repeat with the remaining batch. Let them cool at least 5 minutes so the molten peach filling settles and will not burn your mouth.
- 8Serve warm as a handheld dessert or pack for a last-blast late-summer cookout; they reheat beautifully in the air fryer at 320°F for 2 minutes.
