- 1Peel the bananas and slice them into thick rounds half an inch thick so they hold up once frozen.
- 2Line a large baking sheet with parchment paper and arrange the banana slices in a single layer without touching.
- 3Warm the peanut butter in a small microwave-safe bowl just until it becomes pourable and smooth, stirring once.
- 4Spoon a small dollop of the warmed peanut butter onto the center of each banana slice and gently spread it so it stays nested on top.
- 5Place the sheet in the freezer for about 20 minutes so the peanut butter firms and the bananas chill thoroughly.
- 6Meanwhile melt the dark chocolate chips with the coconut oil in a heatproof bowl set over barely simmering water, stirring until glossy and fully smooth.
