  • 3 medium ripe bananas
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • 1/4 cup creamy peanut butter
  • 1/2 tsp flaky sea salt

Instructions

  1. 1Peel the bananas and slice them into thick rounds half an inch thick so they hold up once frozen.
  2. 2Line a large baking sheet with parchment paper and arrange the banana slices in a single layer without touching.
  3. 3Warm the peanut butter in a small microwave-safe bowl just until it becomes pourable and smooth, stirring once.
  4. 4Spoon a small dollop of the warmed peanut butter onto the center of each banana slice and gently spread it so it stays nested on top.
  5. 5Place the sheet in the freezer for about 20 minutes so the peanut butter firms and the bananas chill thoroughly.
  6. 6Meanwhile melt the dark chocolate chips with the coconut oil in a heatproof bowl set over barely simmering water, stirring until glossy and fully smooth.
  7. 7Remove the chilled banana sheet from the freezer. Working quickly, dip each peanut-butter-topped slice into the melted chocolate or spoon chocolate over to coat completely.
  8. 8Return coated bites to the parchment-lined sheet, sprinkle lightly with flaky sea salt while the chocolate is still wet, and freeze until the chocolate shell is hard, about 45 to 60 minutes.
  9. 9Once solid, transfer the bites to an airtight container, separating layers with parchment so they do not stick.
