  • 2 cups full-fat cottage cheese
  • 1/2 cup plain Greek yogurt
  • 3 Tbsp, plus more for drizzling honey
  • 1 tsp vanilla extract
  • 1 cup, hulled and sliced fresh strawberries
  • 1 cup fresh blueberries
  • 3/4 cup fresh raspberries
  • 1 cup granola
  • 2 Tbsp chia seeds
  • 1/4 cup toasted sliced almonds
  • 1 tsp lemon zest

Instructions

  1. 1Add the cottage cheese, Greek yogurt, honey, vanilla extract, and lemon zest to a food processor or high-speed blender. Blend 45–60 seconds, scraping down the sides once, until the mixture is completely smooth, thick, and mousse-like with no curds remaining.
  2. 2Taste the whipped base and add an extra teaspoon of honey if you prefer it sweeter; it should taste lightly sweet and tangy.
  3. 3In a small bowl gently toss the sliced strawberries, blueberries, and raspberries together so the juices begin to mingle.
  4. 4Spoon whipped cottage cheese into the bottom of each of four glasses or jars. Top with a layer of mixed berries, then a generous sprinkle of granola and chia seeds.
  5. 5Repeat the layers once more, finishing with a final dollop of whipped cottage cheese, remaining berries, granola, and the toasted almonds.
