Ingredients

  • 3 cups full-fat cottage cheese
  • 2 ripe peaches
  • 2 medium heirloom tomatoes
  • 1/2 English cucumber
  • 1/4 cup fresh basil
  • 2 tbsp fresh mint
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 1/4 cup toasted pepitas
  • 1 tsp flaky sea salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tsp everything bagel seasoning

Instructions

  1. 1Spoon the cottage cheese into four shallow bowls, dividing it evenly and creating a slight well in the center of each portion.
  2. 2Halve and pit the peaches, then slice them into thin wedges. Cut the heirloom tomatoes into bite-size chunks and the cucumber into thin half-moons.
  3. 3Arrange alternating pieces of peach, tomato, and cucumber over and the cottage cheese so the colors look bright and inviting.
  4. 4Drizzle each bowl lightly with olive oil and a squeeze of lemon juice. Season generously with flaky sea salt and freshly ground black pepper.
  5. 5Tear the basil and mint leaves over the bowls so the herbs release their aroma. Add a light drizzle of honey for a sweet-savory contrast that plays off the peaches.
  6. 6Sprinkle toasted pepitas and everything bagel seasoning across the top for crunch and savory depth.
  7. 7Taste a small bite and adjust salt or lemon if needed so the bowl tastes balanced and fresh.
  8. 8Serve immediately as a cool, no-cook breakfast that still feels substantial and seasonal.
