
Spicy Chorizo Breakfast Tacos with Avocado Crema

- 12 oz Mexican chorizo, casings removed
- 8 small corn or flour tortillas
- 6 large eggs
- 3/4 tsp total, divided kosher salt
- 1/4 tsp black pepper
- 1 Tbsp unsalted butter
- 1 large ripe avocado
- 1/3 cup sour cream or Mexican crema
- 1 Tbsp lime juice
- 1/4 tsp garlic powder
- 1/4 cup fresh cilantro, chopped
- 1/2 cup pico de gallo or salsa
- 1/3 cup crumbled cotija or queso fresco
- to taste hot sauce
Instructions
- 1Place a large nonstick skillet over medium heat. Add the chorizo and break it into small crumbles with a wooden spoon. Cook, stirring often, until fully browned and slightly crispy at the edges, 7 to 9 minutes. Transfer the chorizo to a paper-towel-lined plate, leaving fat in the pan.
- 2While the chorizo cooks, mash the avocado in a small bowl with the sour cream, lime juice, garlic powder, and salt until mostly smooth with a few small chunks. Taste and adjust lime or salt; set the avocado crema aside.
- 3Warm the tortillas: wrap the stack in a clean kitchen towel and microwave 30–40 seconds, or char each tortilla 15–20 seconds per side directly over a gas flame until lightly blistered. Keep them wrapped so they stay soft and pliable.
- 4Crack the eggs into a bowl, add the remaining salt and the black pepper, and beat lightly with a fork until just combined—no need to make them frothy.
- 5Return the skillet to medium-low heat and melt the butter. Pour in the eggs and gently push them from the edges toward the center with a silicone spatula, forming soft curds. Cook until just set but still glossy and moist, 2 to 3 minutes; remove from heat immediately so they don’t dry out.
- 6Assemble the tacos: spread a spoonful of avocado crema down the center of each warm tortilla. Top with a portion of scrambled eggs, a generous spoonful of crispy chorizo, and a spoonful of pico de gallo.
- 7Finish each taco with crumbled cotija, a sprinkle of fresh cilantro, and a few dashes of hot sauce if you like extra heat.
- 8Serve right away on a platter so everyone can grab two tacos while the eggs are still soft and the tortillas are warm.
