Ingredients
- 2 cups fresh sweet corn kernels
- 8 large eggs
- 2 medium heirloom tomatoes
- 1/4 small red onion
- 1/4 cup chopped fresh cilantro
- 1 lime
- 8 small corn tortillas
- 2 tbsp chili crisp
- 2 tbsp hot honey
- 1/3 cup crumbled cotija cheese
- 1 tbsp olive oil
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Instructions
- 1Dice the heirloom tomatoes and finely chop the red onion; add both to a bowl with chopped cilantro. Squeeze in the lime juice, season lightly with salt, and toss the pico so the tomatoes release a little juice while you cook.
- 2Heat a large cast-iron or nonstick skillet over medium-high heat until hot. Add the olive oil, then the sweet corn kernels in a single layer. Let them sit undisturbed for 2 to 3 minutes so the bottoms char and turn golden in spots.
- 3Stir the corn, sprinkle with salt and the garlic powder, and cook another 2 minutes until bright and lightly blistered. Transfer the charred corn to a plate and keep the skillet on the heat.
- 4Warm the corn tortillas directly in the same dry skillet, about 20 to 30 seconds per side, until pliable and lightly toasted with a few brown freckles. Stack them on a plate and tent with a clean towel so they stay soft.
- 5Crack the eggs into a bowl, add salt and the black pepper, and beat just until the yolks and whites are combined—do not overbeat.
- 6Reduce the skillet heat to medium-low. Pour in the beaten eggs and let them sit 15 seconds, then gently push and fold with a spatula, creating soft curds. When the eggs are still slightly glossy and just set, remove the pan from heat.
- 7Fold half of the charred corn and a spoonful of chili crisp into the eggs so the spice streaks through without overcooking the eggs. Taste and adjust salt if needed.
- 8Build each taco: lay a warm tortilla flat, spoon on a generous portion of the chili-crisp eggs, top with remaining charred corn and a spoonful of heirloom pico.
- 9Finish with crumbled cotija, an extra tiny drizzle of chili crisp if you like heat, and a light zigzag of hot honey. Serve immediately while the eggs are soft and the tortillas are warm.
