Ingredients

- 4 large eggs
- 1 lb heirloom tomatoes
- 2 cups fresh sweet corn kernels
- 3 tablespoons extra-virgin olive oil

- 1/4 cup fresh basil leaves
- 1 garlic clove
- 1 tablespoon lemon juice
- 1 teaspoon kosher salt

- 1Bring a medium saucepan of water to a gentle simmer over medium heat and stir in the vinegar. Crack each egg into a small cup, then carefully slip them into the water one at a time.
