Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 2 large eggs
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup whole milk
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 2 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter for the griddle
  • 1 cup fresh berries for serving
  • 2 tbsp extra honey for drizzling
  • 1/2 cup extra Greek yogurt for topping

Instructions

  1. 1In a large mixing bowl, whisk together the flour, baking powder, and sea salt until evenly combined and no lumps remain.
  2. 2In a separate medium bowl, crack the eggs and beat them lightly until the yolks and whites are blended.
  3. 3Whisk the Greek yogurt, milk, olive oil, honey, lemon zest, lemon juice, and vanilla into the eggs until the mixture looks smooth and creamy.
  4. 4Pour the wet mixture into the dry ingredients and fold gently with a spatula just until no dry streaks of flour remain; a few small lumps are fine and keep the pancakes tender.
  5. 5Let the batter rest at room temperature for 5 minutes so the baking powder can activate and the flour hydrates.
  6. 6Heat a large nonstick skillet or griddle over medium heat until a drop of water sizzles on contact, then lightly grease the surface with butter.
  7. 7Scoop one-quarter cup of batter per pancake onto the hot surface, spacing them so they do not touch.
  8. 8Cook undisturbed for 2 to 3 minutes until bubbles form across the top and the edges look set and lightly golden underneath.
  9. 9Flip carefully with a thin spatula and cook the second side for 1 to 2 minutes until golden brown and cooked through in the center.
  10. 10Transfer finished pancakes to a warm plate and tent loosely with foil while you cook the remaining batter, regreasing the pan as needed.
  11. 11Stack the pancakes on plates, spoon a dollop of Greek yogurt over each serving, and scatter fresh berries on top.
  12. 12Finish with a drizzle of honey and an extra grating of lemon zest if desired, then serve immediately while warm and fluffy.
