Ingredients

  • 4 English muffins
  • 4 large eggs
  • 1 large heirloom tomato
  • 1 cup fresh sweet corn kernels
  • 4 slices sharp cheddar cheese
  • 3 tbsp mayonnaise
  • 2 tbsp chili crisp
  • 2 tbsp butter
  • 1 tbsp extra-virgin olive oil
  • 8 fresh basil leaves
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 scallion

Instructions

  1. 1Slice the heirloom tomato into four thick rounds and sprinkle lightly with salt; set on a paper towel to release excess moisture. Thinly slice the scallion.
  2. 2Stir the mayonnaise together with half the chili crisp in a small bowl to make a quick spicy spread.
  3. 3Heat a large nonstick skillet over medium-high. Add the olive oil and the corn kernels. Cook 3 to 4 minutes, stirring once or twice, until the corn chars in spots and turns fragrant. Season with salt and transfer to a plate.
  4. 4Split and toast the English muffins until golden. Spread the chili-mayo on both cut sides of each muffin.
  5. 5Wipe the skillet and melt half the butter over medium heat. Crack the eggs in and cook undisturbed 2 minutes until the edges turn lacy and crisp.
  6. 6Add a tiny spoon of the remaining chili crisp beside each yolk if desired. Cover and cook 1 more minute so the whites finish but yolks stay runny. Season with salt and pepper.
  7. 7Place a cheese slice on the bottom muffin halves so residual heat starts to melt it. Top with a tomato round, a spoonful of charred corn, a crispy egg, a couple of basil leaves, and a sprinkle of scallion.
