
Savory Fresh-Corn Ricotta Pancakes with Tomato-Basil Relish

Ingredients
- 1 1/2 cups fresh sweet corn kernels
- 1 cup whole-milk ricotta
- 1 cup all-purpose flour
- 2 large eggs
- 3/4 cup whole milk
- 1 1/2 tsp baking powder
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 3 scallions
- 12 oz heirloom tomatoes
- 1/3 cup fresh basil
- 3 Tbsp extra-virgin olive oil
- 1 Tbsp lemon juice
- 2 Tbsp butter
- 1 tsp hot sauce
Instructions
- 1Dice the heirloom tomatoes and place them in a bowl. Thinly slice the scallions and tear the basil. Toss tomatoes with half the olive oil, lemon juice, most of the basil, salt, and hot sauce to make a bright relish; let it sit so juices collect.
- 2In a large bowl whisk flour, baking powder, salt, and pepper. In another bowl beat eggs with ricotta and milk until mostly smooth.
- 3Pour wet ingredients into dry and stir just until combined; a few lumps are fine. Fold in corn kernels and most of the scallions. Batter will be thick.
- 4Heat a large nonstick griddle or 12-inch skillet over medium heat. Brush with a little butter. Scoop one-quarter-cup portions of batter, spacing them apart, and gently flatten each into a 3-inch round.
- 5Cook pancakes 2 to 3 minutes until edges look set and undersides are deep golden. Flip carefully and cook another 2 minutes until centers spring back. Transfer to a warm plate and repeat with remaining batter, adding butter as needed.
- 6Taste the tomato relish and adjust salt or lemon. Warm serving plates.
- 7Stack three pancakes on each plate. Spoon generous tomato-basil relish over and them so juices soak in.
- 8Drizzle remaining olive oil, scatter leftover scallions and basil, and serve at once while pancakes are crisp-edged and steaming.
