Ingredients

  • 3 medium ripe peaches
  • 1 cup full-fat cottage cheese
  • 1 frozen banana
  • 1/2 cup plain Greek yogurt
  • 1/3 cup unsweetened almond milk
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • 1/2 cup granola
  • 1/4 cup sliced almonds
  • 2 tbsp fresh mint leaves

Instructions

  1. 1Pit and roughly chop two of the peaches, reserving the third for topping.
  2. 2Add the chopped peaches, cottage cheese, frozen banana, Greek yogurt, almond milk, honey, and vanilla to a high-speed blender.
  3. 3Blend on high until completely smooth and thick, scraping down the sides once, about 45–60 seconds; the mixture should be spoonable, not pourable.
  4. 4Taste and adjust sweetness with a drizzle more honey if the peaches are tart.
  5. 5Divide the thick smoothie base between two shallow bowls.
  6. 6Slice the remaining peach into thin wedges and arrange artfully on top of each bowl.
  7. 7Sprinkle chia seeds, granola, and sliced almonds over the surface for crunch.
  8. 8Finish with torn mint leaves and serve immediately with a spoon while still cold and creamy.
