Ingredients

  • 2 cups plain nonfat Greek yogurt
  • 2 scoops (about 50 g) vanilla whey protein powder
  • 1/2 cup mixed raw nuts (almonds, walnuts, pistachios)
  • 1 cup fresh blueberries
  • 2 tbsp honey
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon

Instructions

  1. 1Add the Greek yogurt and vanilla whey protein powder to a medium mixing bowl.
  2. 2Whisk vigorously until the powder is fully dissolved and the yogurt turns thick, smooth, and slightly fluffy with no dry streaks.
  3. 3Stir in the chia seeds and ground cinnamon so they distribute evenly through the protein yogurt base.
  4. 4Roughly chop the mixed nuts so you get a mix of fine bits and larger crunchy pieces.
  5. 5Spoon a layer of the protein yogurt into the bottom of two jars or tall glasses.
  6. 6Add a layer of blueberries, then a sprinkle of chopped nuts, and drizzle a little honey over that layer.
  7. 7Repeat the yogurt, berry, nut, and honey layers until the jars are full, finishing with a generous nut topping and a final honey drizzle.
  8. 8Chill for at least 10 minutes if you want the chia to thicken slightly, or serve right away for maximum crunch; lids on for meal-prep mornings.
