Ingredients
- 4 cups plain nonfat Greek yogurt
- 1 scoop (about 30 g) vanilla protein powder
- 1 cup granola low-sugar
- 1 1/2 cups fresh strawberries, sliced
- 1 cup blueberries
- 1/4 cup sliced almonds
- 2 tbsp honey
- 2 tbsp chia seeds
Instructions
- 1In a large bowl stir the Greek yogurt with the vanilla protein powder until completely smooth and no dry powder remains.
- 2Taste the yogurt base and swirl in honey if you want a touch of sweetness without overpowering the tang.
- 3Set out four clear jars so the colorful layers stay visible and motivating all week.
- 4Spoon a thick layer of the protein yogurt into the bottom of each jar, packing it gently so it sits flat.
- 5Add a layer of sliced strawberries and blueberries, then sprinkle chia seeds over the fruit for extra texture and staying power.
- 6Repeat with another yogurt layer, then top with granola and sliced almonds so the crunch stays on the surface until serving.
- 7Seal the jars tightly and refrigerate up to four days; keep any extra granola in a separate small bag if you want maximum crunch at the last minute.
- 8When ready to eat, simply open a jar, give the top a light stir if desired, and dig in cold.
- 9For a warmer variation, microwave the jar without the granola lid for 20 seconds, then add the crunchy topping just before eating.
