Ingredients
- 4 thick slices sourdough bread
- 2 large heirloom tomatoes
- 4 oz feta cheese
- 1/4 cup Greek yogurt
- 4 large eggs
- 1/2 cup fresh sweet corn kernels
- 2 Tbsp extra-virgin olive oil
- 2 Tbsp chopped fresh oregano or basil
- 1 tsp lemon zest
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- pinch red pepper flakes
Instructions
- 1Bring a small saucepan of water to a gentle simmer for the eggs. Add a splash of vinegar if desired, then carefully lower in the eggs and poach 3–4 minutes for runny yolks; transfer to a paper towel.
- 2While water heats, place the feta, Greek yogurt, lemon zest, a drizzle of olive oil, and black pepper in a food processor. Blend until light and creamy, scraping down sides once.
- 3Heat a skillet over medium-high. Add a little olive oil and the sweet corn kernels; cook 2–3 minutes until lightly charred, then season with salt and set aside.
- 4Toast the sourdough slices until deeply golden and crisp. Rub one side of each toast lightly with a cut garlic clove if you like extra savoriness.
- 5Spread a generous layer of whipped feta on each warm toast.
- 6Thickly slice the heirloom tomatoes and arrange overlapping on top of the feta; sprinkle with salt so they release a little juice into the cheese.
- 7Scatter the charred corn over the tomatoes, then carefully place a soft-poached egg on each toast.
- 8Drizzle everything with remaining olive oil, scatter fresh herbs, and finish with red pepper flakes and cracked black pepper.
- 9Serve immediately while the toast is still crunchy and the egg yolk can be broken to create a rich sauce over the tomatoes and feta.
