
Maple Sausage Egg & Cheese Breakfast Burritos

Ingredients
- 12 oz breakfast sausage links or bulk mild sausage
- 8 large eggs
- 1 1/2 cups shredded sharp cheddar
- 4 flour tortillas (10-inch)
- 2 tbsp unsalted butter
- 3 tbsp whole milk
- 3 green onions, thinly sliced
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- to taste hot sauce
- 1 tbsp maple syrup
Instructions
- 1If using links, remove casings. Crumble the sausage into a large nonstick skillet over medium heat. Cook 6–8 minutes, breaking it into small pieces with a wooden spoon, until browned and cooked through. Stir in the maple syrup during the last minute so it glazes the meat. Transfer sausage to a plate and drain excess fat, leaving in the pan.
- 2In a medium bowl whisk the eggs, milk, salt, and pepper until the whites and yolks are fully combined and slightly frothy.
- 3Return the skillet to medium-low heat and add butter. Pour in the eggs. Let them sit 20 seconds, then gently push the set edges toward the center with a spatula, tilting the pan so uncooked egg fills the gaps.
- 4Continue soft-scrambling 2–3 minutes until the eggs are mostly set but still glossy and slightly wet; they will finish cooking off heat. Remove from heat, fold in half the green onions and half the cheddar, and taste for seasoning.
- 5Warm the tortillas one at a time in a dry skillet over medium heat for 20–30 seconds per side until pliable, or wrap the stack in a damp paper towel and microwave 30 seconds.
- 6Lay a tortilla flat. Down the center, layer a quarter of the sausage, a quarter of the scrambled eggs, a generous sprinkle of remaining cheddar, a few green onions, and a few dashes of hot sauce if desired.
- 7Fold the short sides in, then roll tightly from the bottom up into a burrito. Repeat with remaining tortillas and filling.
- 8For a crispy exterior, melt the remaining butter in the skillet over medium heat. Place burritos seam-side down and cook 1–2 minutes per side until golden and the cheese is melty. Slice in half and serve hot.
