
Maple Apple Walnut Baked Oatmeal

Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 2 cups whole milk
- 2 large eggs
- 1/3 cup plus 2 tbsp pure maple syrup
- 2 tsp vanilla extract
- 4 tbsp, melted and cooled unsalted butter
- 2 medium, peeled and diced Honeycrisp apples
- 3/4 cup chopped walnuts
- 1/3 cup raisins
Instructions
- 1Preheat the oven to 375°F. Grease an 8×8-inch baking dish thoroughly with butter or nonstick spray.
- 2In a large bowl whisk together the oats, baking powder, cinnamon, and salt until evenly combined.
- 3In a separate bowl whisk the milk, eggs, maple syrup, vanilla, and melted butter until smooth.
- 4Pour the wet mixture into the dry ingredients and stir until every oat is coated. Fold in the diced apples, walnuts, and the raisins.
- 5Scrape the batter into the prepared dish and smooth the top. Sprinkle the remaining walnuts evenly over the surface and drizzle with the extra maple syrup.
- 6Bake on the center rack for 35–40 minutes until the center is set, the edges are golden brown, and a toothpick inserted in the middle comes out mostly clean with a few moist crumbs.
- 7Let the baked oatmeal cool in the pan for 10 minutes so it firms up enough to cut clean squares. Serve warm, optionally with an extra splash of cold milk or yogurt on the side.
