Ingredients
- 8 large eggs
- 8 corn tortillas
- 1 1/2 cups fresh sweet corn kernels
- 2 medium heirloom tomatoes
- 1 jalapeño
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime
- 3 Tbsp hot honey
- 1/3 cup crumbled cotija cheese
- 1 Tbsp butter
- 1 Tbsp olive oil
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- 1Dice the heirloom tomatoes and jalapeño, then combine them in a bowl with the diced red onion, chopped cilantro, a squeeze of lime juice, and salt to make a quick pico; set aside so the flavors meld.
- 2Heat a large cast-iron skillet over medium-high heat until very hot. Add the olive oil and sweet corn kernels in a single layer.
- 3Let the corn sit undisturbed for 2–3 minutes until deeply charred on the bottom, then stir and cook another 2 minutes until bright and lightly blistered; transfer to a plate.
- 4Warm the corn tortillas one at a time directly over a gas flame or in a dry skillet for 20–30 seconds per side until pliable and lightly toasted; wrap in a clean towel to keep warm.
- 5Wipe the skillet clean, reduce heat to medium-low, and melt the butter. Crack the eggs into a bowl, season with salt and pepper, and whisk just until the yolks and whites combine.
- 6Pour the eggs into the skillet and gently push them from the edges toward the center with a spatula, forming soft curds; stop when they still look slightly glossy and underdone, about 2–3 minutes.
- 7Fold half of the charred corn into the soft scrambled eggs right before removing from heat so the kernels stay snappy.
- 8Assemble each taco by spooning scrambled eggs onto a warm tortilla, topping with remaining charred corn, a generous spoonful of heirloom pico, and crumbled cotija.
- 9Drizzle each taco lightly with hot honey and finish with an extra grind of black pepper and remaining lime wedges on the side.
- 10Serve immediately while the eggs are still creamy and the tortillas are warm so the hot honey melts into every bite.
