- 4 large eggs
- 8 slices thick-cut bacon
- 4 slices sharp cheddar cheese
- 3 tbsp chili crisp
- 2 tbsp hot honey
- 2 tbsp unsalted butter
- 2 cups baby spinach
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 ripe avocado
Instructions
- 1Preheat a large skillet or griddle over medium heat. Lay the bacon slices in a single layer and cook 4 to 5 minutes per side until the edges crisp and the fat renders; transfer to a paper-towel-lined plate.
- 2While bacon cooks, split the English muffins and toast them cut-side down in a toaster or under a broiler until golden and fragrant. Spread a thin layer of butter on each cut side while still warm.
- 3Wipe most of the bacon fat from the skillet, leaving a thin film. Crack the eggs directly into the pan, season lightly with salt and pepper, and cook sunny-side or over-easy for 2 to 3 minutes until whites are set but yolks remain runny.
- 4In the last 30 seconds, lay a cheddar slice over each egg so it begins to melt from residual heat. Remove eggs carefully with a spatula.
- 5Quickly wilt the baby spinach in the same skillet for 30 to 45 seconds just until bright green and slightly collapsed; season with salt.
- 6Slice the avocado and mash lightly with a fork on one half of each muffin; season with a tiny pinch of salt.
- 7Assemble each sandwich: bottom muffin, mashed avocado, wilted spinach, two bacon slices broken to fit, the cheesy egg, a generous spoonful of chili crisp, and a drizzle of hot honey. Cap with the top muffin half.
