- 2 large eggs
- 1.5 cups whole milk
- 1/3 cup pure maple syrup

- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- 1/2 tsp kosher salt
- 1/2 cup chopped pecans
- 2 tbsp brown sugar
Instructions
- 1Preheat the oven to 375°F and lightly grease a 12-cup muffin tin with butter or nonstick spray.
- 2Core the Honeycrisp apples and dice them into small half-inch pieces, leaving the skin on for color and fiber.
- 3In a large bowl whisk the eggs, milk, maple syrup, melted butter, and vanilla until smooth and fully combined.
- 4Add the rolled oats, baking powder, cinnamon, and salt to the wet mixture and stir until every oat is coated and no dry pockets remain.
- 5Fold in most of the diced apples and half the chopped pecans, reserving each for topping.
- 6Divide the batter evenly among the muffin cups, filling each nearly to the top; the mixture will be thick.
