Crispy Potato & Egg Breakfast Quesadillas

Ingredients

  • 2 medium (about 1 lb) russet potatoes, peeled and diced small
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 6 large eggs
  • 1 1/2 cups shredded sharp cheddar cheese
  • 4 flour tortillas (8-inch)
  • 3 green onions, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • as needed hot sauce or salsa for serving
  • 1/2 cup sour cream for serving

Instructions

  1. 1Place the diced potatoes in a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 4 minutes until just fork-tender but not mushy. Drain any excess moisture and pat dry with paper towels.
  2. 2Heat olive oil in a large nonstick skillet over medium-high heat. Add the par-cooked potatoes in a single layer, season with salt, the pepper, and cumin, and cook undisturbed for 3–4 minutes until the bottoms turn deep golden and crispy. Flip and cook another 3 minutes until evenly browned; transfer to a plate.
  3. 3Wipe the skillet clean, reduce heat to medium, and add the remaining oil. Crack the eggs into a bowl, season with the remaining salt, and whisk lightly. Pour into the skillet and scramble gently, pushing with a spatula until just set but still slightly glossy, about 2 minutes; remove from heat.
  4. 4Lay the four tortillas on a clean work surface. Sprinkle half of the cheddar evenly over one half of each tortilla. Top with equal portions of the crispy potatoes, scrambled eggs, green onions, and cilantro, then finish with the remaining cheese.
  5. 5Fold each tortilla in half to enclose the filling, pressing lightly. Wipe the skillet again and place it over medium heat. Cook two quesadillas at a time for 2–3 minutes per side, pressing gently with a spatula, until the tortillas are golden-brown and crisp and the cheese is fully melted.
  6. 6Transfer finished quesadillas to a cutting board and let rest 1 minute so the cheese sets slightly. Slice each into three wedges with a sharp knife or pizza cutter.
  7. 7Serve immediately with dollops of sour cream, hot sauce or salsa on the side, and any extra cilantro. The contrast of crispy potato, melty cheese, and soft egg makes these perfect for busy mornings or casual brunch.
