
Chili-Crisp Soft Scramble Toast with Blistered Tomatoes & Corn

Ingredients
- 4 slices thick sourdough bread
- 5 large eggs
- 1 1/2 cups heirloom cherry tomatoes
- 3/4 cup fresh sweet corn kernels
- 1 1/2 tbsp chili crisp
- 1 tbsp unsalted butter
- 2 sliced scallions
- 2 tbsp chopped fresh cilantro
- 1/2 lime
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup cottage cheese
- 1 tsp olive oil
Instructions
- 1Heat a large nonstick skillet over medium-high heat. Add the olive oil, then the heirloom cherry tomatoes and sweet corn; cook without stirring for 2 minutes so the tomatoes blister and the corn chars lightly, then toss and cook 1 more minute until tomatoes just start to collapse. Season with salt and transfer to a plate.
- 2Toast the sourdough slices until deeply golden and crisp; keep warm.
- 3In a bowl whisk the eggs with salt and black pepper until uniform. Stir in the cottage cheese so small curds remain visible for extra protein and creaminess.
- 4Wipe the skillet, lower heat to medium-low, and add the butter. Once melted and foaming, pour in the egg mixture.
- 5Cook slowly, dragging a spatula through the eggs every 20 seconds to form large soft curds; stop when the eggs are still slightly glossy and just barely set, about 2 minutes total.
- 6Remove from heat and immediately fold in most of the chili crisp so the spicy oil coats the soft scramble without cooking further.
- 7Spread or spoon the chili-crisp scramble over the toasted sourdough. Top generously with the blistered tomatoes and charred corn.
- 8Finish with remaining chili crisp, sliced scallions, cilantro, and a squeeze of lime. Serve at once while the toast is crunchy and the eggs are still custardy.
