Ingredients

  • 4 Tbsp unsalted butter
  • 3 medium ripe peaches
  • 1.5 cups old-fashioned rolled oats
  • 2 cups whole milk
  • 1 cup water
  • 3 Tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 cup plain Greek yogurt
  • 1/3 cup chopped toasted pecans or almonds
  • 2 Tbsp torn fresh basil leaves
  • 2 Tbsp honey

Instructions

  1. 1Pit the peaches and slice them into half-inch wedges; leave the skins on for color and texture. Chop the nuts if not already chopped.
  2. 2Place a 10-inch cast-iron or heavy skillet over medium heat. Add the butter and cook, swirling often, until it foams, turns golden brown, and smells nutty, 3 to 4 minutes. Watch carefully so it does not burn.
  3. 3Add the peach slices to the brown butter in a single layer. Cook without moving them for 2 minutes until the undersides caramelize, then flip and cook 1 to 2 minutes more until edges soften and look glossy. Transfer half the peaches to a plate for topping later.
  4. 4Stir the oats into the remaining peaches and butter in the skillet so every flake is coated. Toast for 1 minute until fragrant.
  5. 5Pour in the milk and water. Add brown sugar, vanilla, cinnamon, and salt. Bring to a gentle simmer, then reduce heat to medium-low.
  6. 6Cook, stirring every minute or so, until the oats are creamy and most liquid is absorbed but the mixture still looks loose, 8 to 10 minutes. It will thicken further off heat.
  7. 7Remove from heat. Dollop Greek yogurt over the oatmeal, nestle the reserved peaches on top, and sprinkle with chopped nuts and torn basil.
  8. 8Drizzle honey over each portion at the table. Serve immediately while the brown-butter aroma is strongest and the peaches are still warm.
