  • 2 medium crisp apples, cored and diced
  • 1 small yellow onion, diced
  • 3 tbsp extra-virgin olive oil

  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 large eggs
  • 2 tbsp fresh parsley, chopped
  • 1 tsp apple cider vinegar
  • 1/3 cup crumbled soft goat cheese (optional)

Instructions

  1. 1Preheat a large 12-inch cast-iron or heavy skillet over medium heat and warm the olive oil until it shimmers.
  2. 2Add the diced onion and cook, stirring often, until it turns translucent and edges begin to golden, about 4 minutes.
  3. 3Tip in the small-diced butternut squash, season with salt, pepper, and smoked paprika, and toss to coat in the oil.
  4. 4Cover the skillet and let the squash steam-sauté for 8 to 10 minutes, stirring once halfway, until the cubes are nearly tender when pierced.
  5. 5Uncover, add the diced apples and fresh thyme, and continue cooking uncovered so the apples soften slightly while the squash edges caramelize, about 5 more minutes.
  6. 6Splash in the apple cider vinegar and scrape up any browned bits from the pan bottom for bright flavor.
  7. 7Create four small wells in the hash with a spoon. Crack an egg into each well, then cover the skillet again and cook until the whites are set and yolks are still runny, 4 to 5 minutes.
  8. 8Remove from heat. Scatter chopped parsley and optional crumbled goat cheese over the top while everything is hot.
