Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 6 tbsp unsalted butter
  • 1 1/2 cups fresh blueberries
  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup, for serving

Instructions

  1. 1In a light-colored skillet, melt butter over medium heat. Continue cooking, swirling often, for 3–5 minutes until the milk solids turn deep golden brown and smell nutty; immediately pour into a heatproof bowl to stop the cooking and let cool 5 minutes.
  2. 2In a large bowl whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl whisk the buttermilk, eggs, cooled brown butter, lemon zest, lemon juice, and vanilla until smooth.
  3. 3Pour the wet ingredients into the dry and stir gently with a spatula just until no dry streaks remain; a few small lumps are fine. Fold in blueberries. Let the batter rest 5 minutes while you heat the pan.
  4. 4Heat a large nonstick griddle or skillet over medium heat and add the remaining butter, swirling to coat. Drop 1/4-cup portions of batter, leaving space between pancakes.
  5. 5Cook 2–3 minutes until bubbles form across the surface and the edges look set and lightly golden. Flip carefully and cook another 1 1/2–2 minutes until the undersides are golden brown and the centers spring back.
  6. 6Transfer finished pancakes to a warm plate and tent loosely with foil. Repeat with remaining batter, adding a thin film of butter or oil between batches if needed.
  7. 7Warm the maple syrup with the remaining blueberries in a small saucepan over low heat for 2–3 minutes until the berries just start to burst.
  8. 8Stack 3 pancakes per person, spoon the warm blueberry maple over the top, and serve right away while the pancakes are fluffy and hot.
