Ingredients
- 8 cups mixed salad greens
- 12 oz cremini mushrooms
- 2 medium Honeycrisp apple
- 1 large shallot
- 2 tsp fresh thyme leaves
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/3 cup toasted walnuts
- 3 oz crumbled goat cheese
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- 1Wipe the mushrooms clean with a damp towel and slice them thickly so they hold shape when sautéed. Core the apples and cut into thin half-moons; leave the skin on for color and crunch.
- 2Thinly slice the shallot and set aside with the thyme. In a small jar combine the vinegar, mustard, honey, salt and pepper, and half the olive oil; shake hard until emulsified and set the dressing aside.
- 3Heat a large 12-inch skillet over medium-high heat. Add the remaining olive oil and swirl until it shimmers.
- 4Add the mushrooms in a single layer; do not crowd. Let them sear undisturbed for 3 to 4 minutes until the undersides turn deep golden.
- 5Flip and cook another 2 to 3 minutes until browned and any released liquid has evaporated. Season with salt, pepper, and the thyme.
- 6Push mushrooms to one side, add the shallot to the empty space, and cook 1 minute until fragrant and translucent. Toss everything together and remove the pan from heat.
- 7Place the greens in a wide serving bowl. Scatter the raw apple slices over the greens so they stay crisp.
- 8Spoon the warm mushroom-shallot mixture directly over the salad; the heat will lightly wilt the greens.
- 9Drizzle the dressing evenly, then top with toasted walnuts and crumbled goat cheese.
- 10Toss gently at the table so every bite gets warm mushrooms, cool apple, and creamy cheese. Serve immediately while still warm.
- 11For make-ahead weekend gatherings, keep components separate and assemble just before serving so the greens stay bright.
