Ingredients
- 1 cup fresh cranberries
- 12 oz cooked turkey breast, sliced or shredded
- 4 large flour tortillas or wraps
- 1 medium crisp apple
- 3 cups baby spinach or mixed hardy greens
- 4 oz cream cheese or soft goat cheese
- 2 tbsp chopped fresh chives
- 1 tbsp chopped fresh dill
- 1 tbsp Dijon mustard
- 1 tsp honey
- 1/2 tsp lemon zest
- 1/4 cup toasted sliced almonds
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp olive oil
Instructions
- 1Make a quick cranberry relish: pulse fresh cranberries in a food processor with honey, salt, and lemon zest until coarsely chopped but still chunky. Alternatively chop by hand. Taste; it should be bright and lightly sweet. Set aside.
- 2In a small bowl, soften the cream cheese or goat cheese and mix with Dijon mustard, chopped chives, dill, salt, and pepper until spreadable and herb-flecked.
- 3Core the apple and cut into thin matchsticks. Toss briefly with a drop of olive oil or lemon juice to prevent browning.
- 4Warm the tortillas one at a time in a dry skillet over medium heat for 15 to 20 seconds per side until pliable, or wrap in a damp towel and microwave briefly.
- 5Lay each tortilla flat. Spread a generous layer of the herbed cheese mixture across the center, leaving a border.
- 6Layer baby greens, sliced or shredded turkey, a spoonful of the fresh cranberry relish, apple matchsticks, and a sprinkle of toasted almonds.
- 7Fold in the sides, then roll tightly from the bottom up into a secure burrito-style wrap. Slice in half on the diagonal if serving immediately.
- 8Wrap snugly in parchment or foil for work lunches. The fresh cranberry relish keeps the wrap lively without making it soggy when assembled the morning of. Serve cool or at room temperature.
