  • 2 medium yellow summer squash
  • 1 medium zucchini
  • 1 1/2 cups seedless red grapes
  • 8 (8-inch) large flour tortillas or wraps
  • 3/4 cup hummus
  • 3 cups baby arugula
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh dill
  • 1 lemon
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 tbsp toasted sunflower seeds

Instructions

  1. 1Using a vegetable peeler or mandoline, shave the yellow squash and zucchini into long, thin ribbons. Stop when you reach the seedy cores and discard those or save for another use.
  2. 2Place the squash ribbons in a colander, sprinkle lightly with salt, and let them sit 8–10 minutes so excess moisture draws out. Pat dry thoroughly with a clean kitchen towel so the wraps stay sturdy.
  3. 3Halve the grapes. In a small bowl toss them with a squeeze of lemon juice, chopped dill, a drizzle of olive oil, and pepper so they pick up bright flavor.
  4. 4Warm the tortillas one at a time in a dry skillet over medium heat for about 20 seconds per side until pliable and lightly toasted in spots. Stack them under a clean towel to keep warm.
  5. 5Spread a thin, even layer of hummus across the center of each tortilla, leaving a clean border so rolling is easy.
  6. 6Lay a small handful of baby arugula over the hummus, then arrange a nest of the dried squash ribbons on top. Spoon the dressed grapes and a sprinkle of feta and sunflower seeds over the ribbons.
  7. 7Fold the bottom edge up, tuck the sides in, and roll tightly into a compact wrap. Slice each wrap on a sharp diagonal if serving immediately.
