Ingredients

  • 3 medium sweet potatoes
  • 1 small bunch fresh sage
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 large carrot
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1/2 cup coconut milk
  • 1 tsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 cup toasted pepitas

Instructions

  1. 1Preheat the oven to 400°F. Peel and cube the sweet potatoes into 1-inch pieces and roughly chop the onion and carrot.
  2. 2Toss the sweet potatoes, onion, carrot, and most of the sage leaves with olive oil, salt, pepper, and smoked paprika on a rimmed baking sheet.
  3. 3Roast 30–35 minutes, stirring once, until the vegetables are deeply golden and fragrant with sage.
  4. 4Transfer the roasted vegetables to a large pot, add the smashed garlic cloves and vegetable broth, and bring to a gentle simmer over medium heat.
  5. 5Simmer 8–10 minutes so the flavors meld and the garlic softens completely.
  6. 6Remove from heat and blend with an immersion blender until completely smooth and silky, or carefully transfer in batches to a countertop blender.
  7. 7Stir in the coconut milk and apple cider vinegar, then return to low heat for 2–3 minutes to warm through without boiling.
  8. 8Taste and adjust seasoning; the soup should taste bright and herb-forward rather than heavy.
  9. 9Ladle into bowls and top with remaining torn fresh sage and toasted pepitas for crunch.
  10. 10If packing for lunch, cool slightly then portion into insulated containers; reheat gently and add toppings just before eating.
  11. 11The soup thickens as it sits—loosen with a splash of broth if needed.
  12. 12Serve with a simple side salad or crusty bread if desired for a fuller midday plate.
