Ingredients
- 2 cans (15 oz each), drained canned chickpeas
- ¾ cup fresh cranberries
- 3 tbsp chopped fresh sage
- ½ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 2 tbsp lemon juice
- 2 stalks celery
- 3 green onions
- 4 large flour tortillas or wraps
- 8 butter lettuce leaves
- 1 tbsp olive oil
- 1 tsp honey
- ¾ tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
Instructions
- 1Drain and rinse the chickpeas well, then pat dry. Place in a mixing bowl and roughly mash half of them with a fork, leaving plenty of whole beans for texture.
- 2Warm a small skillet over medium heat with olive oil. Add the fresh cranberries and honey; cook 3 to 4 minutes until they soften and a few pop. Cool 5 minutes.
- 3Finely dice the celery and slice the green onions. Chop the sage leaves finely.
- 4Stir Greek yogurt, mayonnaise, lemon juice, salt, pepper, garlic powder, and most of the sage into the chickpeas until creamy and cohesive.
- 5Fold in the diced celery, green onions, and the cooled cranberries with any pan juices. Taste and adjust seasoning; the filling should taste bright and herby.
- 6Warm the tortillas briefly in a dry skillet or microwave so they flex without cracking.
- 7Lay two butter lettuce leaves down the center of each tortilla. Spoon a generous line of the sage chickpea–cranberry salad on top.
- 8Fold in the sides, then roll tightly from the bottom into a secure wrap. Slice each wrap in half on the bias for easy sharing.
- 9Arrange halves on a board or pack individually in parchment for a weekend lunch spread. The filling can be made a day ahead; assemble wraps just before eating so the tortillas stay soft.
