Ingredients
- 1 large bunch curly kale
- 3/4 cup fresh cranberries
- 1 large crisp apple
- 1 small sweet potato
- 8 fresh sage leaves
- 1/3 cup toasted pumpkin seeds
- 1/3 cup shaved Parmesan
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- 1Wash the kale thoroughly, strip the leaves from the tough stems, and tear into bite-size pieces. Place in a large bowl.
- 2Drizzle a spoonful of olive oil and salt over the kale. Massage firmly with clean hands for 2 full minutes until the leaves darken, shrink slightly, and feel silky rather than raw and tough.
- 3Peel the sweet potato and cut into thin matchsticks or small dice. Heat a skillet over medium heat with a light film of olive oil and quickly sauté the sweet potato pieces 6 to 8 minutes, stirring often, until just tender and lightly golden at the edges. Cool slightly.
- 4Halve the fresh cranberries if large. Core the apple and slice into thin half-moons, leaving the skin on for color and crunch.
- 5Stack the sage leaves, roll tightly, and slice into fine ribbons. Reserve a few whole leaves for garnish.
- 6In a small bowl whisk the remaining olive oil with lemon juice, honey, Dijon, remaining salt, and pepper until bright and emulsified. Stir in most of the sage ribbons.
- 7Add the warm sautéed sweet potato, cranberries, and apple slices to the massaged kale. Pour over the sage-lemon vinaigrette and toss thoroughly so every leaf is coated and glossy.
- 8Divide among plates or pack into lunch containers. Top each portion with toasted pumpkin seeds, shaved Parmesan, and the reserved sage. The salad holds well for several hours if dressed just before serving.
