Ingredients

  • 1 large bunch curly kale
  • 2 cups seedless green grapes
  • 1 large crisp apple
  • 1 cup shredded carrots
  • 1/3 cup toasted sliced almonds
  • 2 tbsp hemp seeds
  • 3 tbsp fresh chives
  • 3 tbsp apple cider vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. 1Strip kale leaves from the tough stems and tear into bite-size pieces. Place in a large bowl.
  2. 2Drizzle a little olive oil and salt over the kale. Massage firmly with clean hands for 2 to 3 minutes until the leaves darken, soften, and reduce in volume.
  3. 3Halve the green grapes. Core the apple and cut into thin matchsticks; toss the apple pieces with lemon juice so they stay bright.
  4. 4Whisk apple cider vinegar, remaining olive oil, maple syrup, Dijon, salt, and pepper into a glossy dressing.
  5. 5Pour most of the dressing over the massaged kale and toss until every leaf is lightly coated.
  6. 6Add halved grapes, apple matchsticks, shredded carrots, and snipped chives. Toss again gently so the fruit stays intact.
  7. 7Sprinkle toasted almonds and hemp seeds over the top. Drizzle any remaining dressing if the salad looks dry.
  8. 8Let sit 5 minutes so flavors marry, then portion into lunch containers or serve immediately. The salad holds well for several hours.
