Ingredients

  • 3/4 cup fresh pecans
  • 2 medium (about 1.25 lb) sweet potatoes
  • 2 tsp chopped fresh rosemary
  • 1 tsp fresh thyme
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 4 cups baby spinach
  • 1/2 cup crumbled feta
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 4 large flour tortillas
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. 1Preheat the oven to 425°F and line a rimmed baking sheet with parchment. Peel the sweet potatoes and cut them into ½-inch cubes.
  2. 2Toss the sweet potato cubes on the sheet with olive oil, chopped rosemary, thyme, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread in a single layer.
  3. 3Roast for 22 to 25 minutes, flipping once halfway, until the edges are caramelized and the centers are tender when pierced with a fork. Remove and let cool 5 minutes.
  4. 4While the potatoes roast, toast the fresh pecans in a dry skillet over medium heat for 3 to 4 minutes until fragrant. Cool, then chop coarsely.
  5. 5In a small bowl stir the Greek yogurt with lemon juice and salt to make a quick tangy spread.
  6. 6Warm the tortillas one at a time in a dry skillet or microwave for 15 seconds so they become pliable and easy to roll.
  7. 7Spread a thin layer of the yogurt mixture down the center of each tortilla. Top with baby spinach, a quarter of the roasted sweet potatoes, a sprinkle of chopped pecans, and crumbled feta.
  8. 8Fold in the sides, then roll tightly from the bottom to form a secure wrap. Slice in half on the bias if desired. Serve immediately or wrap in parchment for a portable lunch; the warm potatoes and toasted pecans make every bite satisfying.
