Ingredients

  • 4 (10-inch) large spinach or whole-wheat tortillas
  • 2 large ripe avocados
  • 2 tbsp fresh lime juice
  • 1/4 tsp garlic powder
  • 3/4 tsp, divided kosher salt
  • 2 large English cucumbers
  • 1 additional, sliced ripe avocado
  • 3 cups baby spinach
  • 1/2 cup loosely packed fresh basil leaves
  • 1/3 cup chopped fresh cilantro
  • 3, thinly sliced green onions
  • 1/2 cup crumbled feta or goat cheese
  • 3 tbsp toasted sunflower seeds
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp black pepper
  • 1/4 cup for spreading optional hummus

Instructions

  1. 1Halve and pit the large avocados. Scoop the flesh into a medium bowl and mash with a fork until mostly smooth but still slightly chunky. Stir in the lime juice, garlic powder, salt, and black pepper until creamy and bright green.
  2. 2Wash the cucumbers and trim the ends. Using a vegetable peeler or mandoline, shave long thin ribbons from both cucumbers, rotating as you go and stopping when you reach the seedy core. Pat the ribbons dry with paper towels so the wraps stay sturdy.
  3. 3Lay the tortillas flat on a clean work surface. If using hummus, spread in a thin layer across the center of each tortilla, leaving a 1-inch border.
  4. 4Spread a generous quarter of the mashed avocado mixture down the center of each tortilla over the hummus (if using). The avocado acts as both flavor and a moisture barrier.
  5. 5Layer baby spinach leaves over the avocado on each wrap, followed by several cucumber ribbons folded or piled neatly so they run the length of the tortilla.
  6. 6Add a few fresh basil leaves, a sprinkle of chopped cilantro, sliced green onions, and a portion of the remaining sliced avocado to each wrap.
  7. 7Sprinkle crumbled feta or goat cheese and toasted sunflower seeds evenly over the fillings. Drizzle each lightly with a few drops of olive oil and a tiny pinch of the remaining salt.
  8. 8Fold the bottom edge of each tortilla up over the filling, then fold in the sides and roll tightly away from you into a snug burrito-style wrap. Slice each wrap in half on a slight diagonal.
  9. 9Serve immediately, or wrap tightly in parchment or foil for packed lunches. For best texture, assemble within a few hours of eating and keep chilled; the cucumber stays crisp and the avocado stays vibrant with the lime.
