Ingredients
- 3 cups seedless green grapes
- 1 cup seedless red grapes
- 1 large English cucumber
- 2 medium ripe late-season tomatoes
- 1/2 green bell pepper
- 1 small shallot
- 1 garlic clove
- 2 slices day-old crusty bread
- 1/4 cup extra-virgin olive oil
- 3 tbsp sherry vinegar
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup ice water
- 1/4 cup fresh basil leaves
- 1/4 cup toasted sliced almonds
Instructions
- 1Roughly chop the cucumber, tomatoes, green bell pepper, and shallot so they fit easily into a blender; peel the garlic clove.
- 2Tear the day-old bread into chunks and soak it briefly in a splash of cold water until softened, then squeeze out excess liquid.
- 3Add the green and red grapes, chopped vegetables, garlic, soaked bread, olive oil, sherry vinegar, salt, and pepper to a high-powered blender.
- 4Blend on high until the mixture is completely smooth and pale green-pink, stopping once to scrape down the sides if needed.
- 5With the motor running, stream in ice water a little at a time until the gazpacho reaches a silky, pourable consistency that still coats a spoon.
- 6Taste and adjust with more vinegar or salt so the soup tastes bright and balanced rather than flat; the grapes should give gentle sweetness against the vinegar.
- 7Pour the gazpacho into a pitcher or large jar, cover, and chill at least 1 hour (or up to overnight) so the flavors marry and the soup becomes fully cold.
- 8Just before serving, give the gazpacho a quick stir or shake; ladle into chilled bowls or small glasses for a shareable starter.
- 9Tear fresh basil leaves over each portion and scatter toasted sliced almonds on top for crunch and aroma.
- 10Set the bowls on a tray with extra grapes and herbs so guests can customize; keep any leftover soup refrigerated and stir before the next pour.
