Ingredients

  • 1.5 lb turkey breast cutlets
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken or turkey broth
  • 1/4 cup heavy cream
  • 3 cups frozen green beans
  • 1/2 tsp garlic powder
  • 2 cups frozen stuffing mix or prepared stuffing
  • 1 cup cranberry sauce
  • prepared from 1 cup flakes plus milk and instant mashed potatoes

Instructions

  1. 1Season the turkey cutlets on both sides with salt, black pepper, and dried thyme. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. 2Sear the cutlets 3 to 4 minutes per side until golden and cooked through to 165°F. Transfer to a cutting board and tent loosely with foil to rest.
  3. 3In the same skillet, melt the butter over medium heat. Whisk in the flour and cook 1 to 2 minutes until the roux turns light golden and smells nutty.
  4. 4Gradually whisk in the broth, scraping up any browned bits. Simmer 3 to 4 minutes until the gravy thickens, then stir in the heavy cream and taste for seasoning.
  5. 5Meanwhile, steam or microwave the green beans until tender-crisp, about 4 minutes, then toss with garlic powder and a small pat of butter if desired.
  6. 6Prepare the mashed potatoes according to package directions until smooth and hot. Warm the stuffing in the microwave or oven until steaming.
  7. 7Slice the rested turkey against the grain into thick strips. Reheat briefly in the gravy if needed so every piece is coated and juicy.
  8. 8Assemble classic TV-dinner style: spoon mashed potatoes into one compartment, stuffing into another, green beans in a third, a spoonful of cranberry sauce in the corner, and turkey with ladles of gravy in the center.
  9. 9Serve immediately so the gravy stays glossy and the compartments stay distinct, just like the holiday frozen trays everyone remembers.
