Spiced Apple Onion Chicken Bake

Ingredients

  • 8 pieces (about 3 lb) bone-in skin-on chicken thighs
  • 3 medium crisp apples
  • 2 large red onions
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cumin
  • 1 tsp smoked paprika
  • 6 fresh thyme sprigs
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp maple syrup

Instructions

  1. 1Preheat the oven to 425°F and position a rack in the center.
  2. 2Pat the chicken thighs dry so the skin can crisp properly.
  3. 3In a large bowl, toss the chicken with olive oil, apple cider vinegar, cinnamon, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  4. 4Core the apples and cut into thick wedges; peel the red onions and cut into thick wedges as well.
  5. 5Arrange the apple and onion wedges in a single layer on a large rimmed baking sheet.
  6. 6Nestle the seasoned chicken thighs skin-side up among the fruit and onions, leaving a little space between pieces.
  7. 7Tuck the thyme sprigs the pan and drizzle the maple syrup lightly over the apples and onions only.
  8. 8Bake for 35 to 40 minutes, until the chicken skin is deeply golden and the internal temperature hits 165°F.
  9. 9If the skin needs extra crispness, broil for the final 2 to 3 minutes while watching closely.
  10. 10Rest the pan for 5 minutes, then spoon the caramelized apples and onions over the chicken and serve family-style.
