Ingredients

  • 1 lb cremini mushrooms
  • 2 large firm apples
  • 1.25 lb Yukon gold potatoes
  • 1 medium red onion
  • 12 oz smoked chicken sausage
  • 1 Tbsp chopped fresh rosemary
  • 2 tsp fresh thyme
  • 4 garlic cloves
  • 1.5 Tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 3 Tbsp olive oil
  • 1 tsp maple syrup
  • 1.25 tsp kosher salt
  • 3/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped fresh parsley
  • 4 eggs optional for topping

Instructions

  1. 1Heat oven to 425°F. Line a large rimmed sheet pan with parchment for easy cleanup.
  2. 2Halve or quarter mushrooms depending on size. Cut potatoes into ¾-inch cubes. Slice apples into thick wedges; cut onion into chunks. Slice sausage into coins.
  3. 3In a large bowl whisk olive oil, apple cider vinegar, Dijon, maple syrup, salt, pepper, smoked paprika, rosemary, and thyme. Add potatoes, mushrooms, onion, and sausage; toss thoroughly to coat.
  4. 4Spread everything in a single layer on the sheet pan. Roast 20 minutes.
  5. 5Pull the pan, scatter apple wedges and smashed garlic cloves over the hash, and toss gently. Return to oven 12–15 minutes more until potatoes are crisp-tender, mushrooms are browned, and apples are caramelized at the edges.
  6. 6If adding eggs, make four wells in the hash, crack an egg into each, and bake 5–7 minutes more until whites are set and yolks still runny.
  7. 7Taste a potato cube; adjust salt if needed. Shower with chopped parsley.
  8. 8Bring the whole pan to the table or divide among plates. The mix of savory sausage, earthy mushrooms, and bright apple makes it a complete weekend dinner that feeds a small crowd without extra sides.
